Flipping Family Fun For Pancake Day

Banana Pancakes:

Ingredients:

  • 40g of Porridge oats
  • 2 ripe bananas
  • 2-3 eggs
  • spray oil

Method:

  1. Weigh and measure 40g of porridge oats into a bowl.
  2. Cut and mash 2 ripe bananas, (the riper the better)
  3. Mix oats, mashed bananas and eggs together in a bowl to make a batter.
  4. Heat frying pan up over a medium to high heat and spray with oil.
  5. Spoon mixture into the hot pan.
  6. Wait for the edges to crisp and bubbles to form in the middle of the pancake.
  7. Then get ready to flip. Cook on both sides and enjoy!

 

Oat and raisin scotch pancakes:

Ingredients:

  • 3 teaspoons vegetable oil, or a few squirts of spray oil
  • 50g oats
  • 50g self-raising flour
  • 50g raisins or other dried fruit
  • 150ml semi-skimmed or skimmed milk
  • 1 egg

(Cost : 8-10p per pancake)

“That’s the stuff!”

Method:

  1. Combine the flour, oats, dried fruit, egg and milk together and mix well
  2. Heat a teaspoon oil/few squirts spray oil to a frying pan (non-stick is best), and then add the mix using a ladle or spoon (about one ladle per pancake). You will probably be able to make 1-2 small pancakes each time if you have a large frying pan.
  3. Turn the pancakes once you can see lots of bubbles appearing (around 3-4 minutes per side). Keep the pancakes warm in the oven until they are all ready.
  4. Serve with a spoon of natural yoghurt, some chopped fruit such as banana or apple, and a drizzle of honey (if you want a slightly sweeter taste).

Fruit cauli (use frozen berries or mango + pineapple pieces)

Exotic dried fruit mix with desiccated coconut

Apple (baked/fried slices) and cinnamon

Mozzarella, basil, tomato

Cream-cheese and ham/smoked salmon and spinach

Curried/spiced chickpeas

Bolognese
